My poor food photography skills keeps me away from posting recepies. Today, I decided to post this curry, since it has been a long time that I have not posted any recepies.This recipe is easy to cook.I wanted to try potatoes fry differently and was thinking of some healthy options.So thought of adding methi leaves to the usual potatoe fry that I make.
Ingredients
- Potatoes-2( If its big in size)
- Methi leaves-1 cup
- Mustard-1 tsp
- Split Urd dhal-1/2 tsp
- Jeera-1 tsp
- Hing- a pinch
- Onion-1( cut into small pieces)
- Salt- to taste
- Turmeric powder-1/2 tsp
- Chilli powder-1 tsp
- Pepper powder-1/2tsp
Method:
Wash and boil the potatoes.
Peel the skin of the potatoes and cut into cubes.
Wash the methi leaves and drain the water.
Place a frying pan on the stove and add oil.
Once the oil is hot do the seasoning with the mustard, urad dhal, jeera and hing.Add the onion and saute until its golden brown.
Now add the methi leaves, turmeric powder, chilli powder and salt.
Cover and keep for few minutes until the methi leaves are cooked.No need to add water for cooking the leaves.
Remove the lid and saute until the water in the pan evaporates.
Add the potatoes and mix it well.
Sprinkle the pepper powder.
Check for salt and spice.
Remove the pan from the stove.
Serve and enjoy it with rice or chappathi.
